As a chef, teacher, author, and advocate for women, CJ Jackson has spent more than 35 years shaping how seafood is taught and enjoyed in the UK. Formerly Vice Principal at Leiths and a tutor at Le Cordon Bleu, she went on to lead the Billingsgate Seafood School. CJ is also a published author of numerous other cookbooks and a familiar face in food media, with regular television appearances including cookery slots on Sunday Brunch, alongside contributions to events and press features. She is a regular speaker on seafood, sustainability, and cookery, helping to bring expert knowledge to wider audiences.A strong supporter of greater inclusion of women in seafood and culinary industries, CJ shares her passion through hands-on courses that make fish and shellfish accessible, enjoyable, and inspiring for everyone.
I was lucky enough to join CJ on one of her classes a few years back. After a full early morning market tour she let us loose with the knives! We had a brilliant 3 hour lesson on knife skills with several different species. After filleting and butterflying we then had a wonderful taste testing session of our prepared fish. This book will help us all understand more some of the incredible jewels we have available to prepare and cook for ourselves and customers.
