The National Federation of Fish Friers are delighted to announce Lesley Graves & Des Anastasiou from the award winning Burton Road Chippy will be their guest friers on the August ‘Three-Day Training Course: NFFF Complete Guide to Fish and Chip Shop Management’.
Burton Road Chippy officially the second best fish and chip shop in the UK after winning the accolade at the 2017 National Fish and Chip Award. The shop is a current NFFF Quality Award holder as well as holding a 5 star FSA food hygiene rating and being MSC certified. They have won numerous other awards including Independent Restaurant of the Winner 2015, Staff Training & Development Winner 2015, NFFF Quality Award Champion Winners 2016 plus many more.
Over the three days students will cover,
- Product sourcing
- Fish, potato and batter: selection and preparation
- Types of oils and fats
- Hands on cooking including correct frying temperatures, range management and portion control
- Oil management
- Food hygiene
- Health and Safety requirements
- Managing accounts
- Dealing with VAT
- Customer service
